Directions
In a very heavy bottomed pot, whisk water & brown sugar to combine, bring to a boil. Reduce a touch.
Add milk in very slowly while whisking. Make sure it’s still maintaining a boil.
- Add cream in the same way.
- Add a touch of salt / 3 tsp
In a seperate bowl, make a slurry with eggs and corn starch
Whisk quickly into the pot. Bring to a boil.
Add in the rum.
- Reduce a touch. Turn down to a simmer while you make the whipped cream. If the rum makes it too liquidy, bring back to a boil for a couple minutes to re-thicken.
- Add butter off the heat to help emulsify.
Pour into individual ramekins or dessert glasses. Let set up at least 6 hours in the fridge.
