Traditionally, shrimp cocktail is served with whole, colossal-sized shrimp. Claudia's version involves cutting the shrimp into medium-sized pieces and adding mangoes, red onions, bell peppers, scotch bonnet peppers or jalapenos, and lime.
Ingredients

2 Tbsp Fresh Cilantro, chopped

2 Large Mangoes, peeled, pitted and finely diced

1 C. Red Bell Peppers, cut small

½ Tsp Cumin

Juice of 3 Limes

1 Jalapeño, seeded and finely diced

1/2 Red Onion, finely diced

2 lbs Colossal Shrimp, par-boiled or cooked, peeled and deveined

Kosher Salt and Freshly Ground Black Pepper to taste.

Directions
Toss the cilantro, mangoes, lime juice, jalapeño, and red onions in a medium bowl. Add shrimp and allow to marinate for at least ½ hour. Season with salt & pepper to taste.
- Divide half of the mixture among glasses with a wide mouth.
- Serve with plantain or corn chips.
- Enjoy in good company.
